I spent all day today, with the exception of a short lunch break, cleaning and organizing my house. I'd love to share the outcome of all my hard work and maybe give some of you a little motivation to get some bins and dive in!

I didn't take a before picture but this is under our bathroom sink now.

I had so much fun organizing everything and finding out how much more room I can have. Our house fairly small for all of our things but being organized makes all the difference in the world! If you need any tips leave a comment or email me.

The other night I decided that I would treat my boys to some delicious fried food. I mixed up some milk and vinegar to make buttermilk and added flour to make a runny paste. Sounds gross so far, I know. I cut up a yam, onion, and 1 and 1/2 chicken breast. I poured a good amount of vegetable oil into the pot I use for spaghetti noodles and using a candy thermometer I got it up to about 350-375F. I put the yam fries in first and fried them for about 5 minutes. Removed them and after dipping my onions in the buttermilk mixture I fried them for a couple minutes until golden brown. After I removed the onions I dipped my chicken strips  into the buttermilk mixture and put them in the pot to fry for a few minutes. They were cut  in very thin long strips so they cooked pretty quick, within a few minutes. After all the food was friend I made a bbq mayo dipping sauce, like the one at red robin, and we devoured this in minutes. 
This is what I had for lunch today. Homemade Jalapeno poppers and stuffed tomatoes. Preheat the oven to 350f. I cut the jalapeno peppers in half and got all the seeds out. I put the halves into boiling water for about 15 minutes to soften. While the peppers were boiling I cut in half and hollowed out a small vine tomato and stuffed it with shredded mozzarella and basil. For this I would change one thing because it was a bit too cheesy. Instead of throwing the "guts" of the tomatoes out, mix them with the shredded mozzarella cheese and basil and then stuff the tomato. It will taste a lot better and the cheese wont be so over-powering. I set the stuffed tomatoes into a small baking dish and removed the jalapenos from the boiling water and ran cold water over them to cool them down to make it easier to stuff them. I stuffed them with cream cheese and sprinkled mozzarella cheese over the top. In my opinion these turned out perfect. They have a little kick ;) I've used jack cheese before too and thats really good. After stuffing the peppers I placed them in the baking dish with the tomatoes. Using olive oil spray, spray the tops of the tomatoes a little and put the baking dish in the oven. Keep watching closely because you just want to cook them until the cheese is melted. I didn't even time it to be honest.

As you probably already know, I love to cook. I have so much fun coming up with my own recipes and dinners. Here are a few of the dinners we've had lately that I am proud of.

I made this BBQ Chicken Sandwich with homemade, baked yam fries and broccoli.

This next one I was pretty proud of and it was actually so easy and quick to make.
It's a zucchini and rice stuffed lemon pepper chicken breast with a sweet potato and cheddar cheese stuffed bell pepper. 

I'd like to add that both of these meals have no added salt and definitely don't need it. If you want a run down on the ingredients and how to make them let me know. It's so easy, quick, delicious and healthy!

I thought I would share what I am reading and what I am going to read in case you are looking for some good reads. I will comment on how much I liked them after I've read them. 

Right now I'm reading Eat, Pray, Love by Elizabeth Gilbert and I really love it. I haven't seen the movie yet because I think watching the movie first kind of ruins the book. At least for me. So far I've followed Gilbert through Italy and India, which is the Eat and pray parts of her book. She is really good about taking me on the journey with her and it  makes me want to go out and eat some good food. I also love her style of writing. It's easy to follow and is very captivating. I am excited to keep reading and following her to where she goes next. I think the "love" part of her journey will be my favorite. 

Here's what's up next. As soon as I finish Eat, Pray Love I am going to dive into the classics. I am very excited about this because I haven't really taken the time to read a lot of the good ol' classics. I think we are so drawn to what is modern and new that we tend to leave the other stuff behind. I would hate to see these amazing books be forgotten. I know they aren't as easy to read but I think it will be a fun challenge. I hope you will read them with me.

Steaming veggies is the healthiest way to cook them. Really besides baking and raw it's the only way you really should cook vegetables to get the full amount of nutrients. I have been making a lot of steamed veggies and I find it gets a bit boring eating them plain. Last night I decided to mix it up a bit and wanted to flavor my veggies without salt or butter so here's what I did.



Take about a half a piece of ginger and a whole lemon and slice them up. Take the all the ginger slices and all but 3 lemon slices and throw them into a sauce pan of about an inch or two of water. Make sure you have a steamer that fits the sauce pan. splash a little soy sauce in the water and turn the heat to high.
Take your veggies and the three left over lemon slices and put them 
in the steamer and place it on the sauce pan.
Steam until the veggies are tender and you can stick a fork through them. Times depend on the veggies you are using. I promise your veggies won't need anything added to them.
 This is so delicious and healthy!
I decided I wanted to make myself fajitas for lunch today but I wanted a healthier version that still had that great fajita flavor. This is what I came up with and it was quite delicious. Give it a try and see what you think. It's got all the foods you need and want in a healthy meal and it's salt free and very filling. It's also great if you want to make everything the night before and pack it up for work the next day. It reheats well.

Here is a rough run down on the ingredients I used.
Baby spinach is a must for your fridge. One of the best things you can eat!

You need fat in your diet but what they say fat they don't mean a cheeseburger. We need healthy, natural fats like olive oil and avocados. Olive oil is a great way to get that healthy fat in your diet but only use a little. 
I swear by Mrs. Dash. This one is the "extra spicy" and it's actually not spicy. It's completely salt free and is just a mix of delicious herbs and spices. 

- You will also need low fat cottage cheese, salsa, a whole chicken breast, whole wheat tortillas, a small bell pepper, and about a quarter of an onion. 

You are going to want to cut up your onion and bellpepper into slices and place them in a preheated pan ,just above medium heat, with a little olive oil and I sprinkled a little Mrs. Dash on top. Saute these until the onion is clear and the pepper is looking soft and browned. 
Take the pepper and onion out of the pan and set aside on a paper towel. The paper towel will soak up any excess olive oil. Leave the pan on the heat and add a little more olive oil. 
Take a whole chicken breast and cut it into thin slices and sprinkle with Mrs. Dash. Put the chicken in the pan and sear quickly then reduce the heat just below medium so the chicken cooks throughout. I just take a fork and when I think they are close to being done I cut a piece and if it breaks apart nicely and is no longer pink inside I take them off the heat. 
While my chicken is cooking I take a spoonful of salsa and cottage cheese and smear it across the whole wheat tortilla. Salsa is a great substitute for salt and you can eat as much as you want. The reason I use cottage cheese is because regular cheese is fattening but you've got to have cheese on a fajita. Cottage cheese is low in fat and is full of protein and is a great way of getting your dairy. Cottage cheese actually has an amazing flavor especially if you put the hot chicken on top to melt it. 
Now is where your spinach comes in. I love substituting regular lettuce with spinach because it is so much healthier and the great thing here is if you aren't a big spinach fan this is a great way to eat it. You won't even notice it's in there, it will be just like having any other lettuce but with all the nutrients. Try to avoid ice berg lettuce because it's pretty much just water and really doesn't contain anything that will benefit your health. 
Now put your bell peppers and onions on the spinach. 
And now place you chicken on the top.
Roll up the fajita, place a little extra spinach on the side with a few fresh raspberries and a small sprinkle of gorgonzola cheese (this is where I cheat a little) and either olive oil and balsamic for a dressing or a little of your favorite low fat oil based dressing. I like the raspberry ones. Add a large glass of water and a plum for dessert and you are good to go.
After nibbling on bell peppers while I was cooking, this was what I had for left overs. This along with all the other ingredients you already have in your fridge will make another full meal for the next day.
